I thought that I'd write a follow-up post on David Shennan's Paddock to Plate blog, on making bacon given that I'm pretty keen on making bacon myself, and really, anything thing at all that involves pork belly.

Salting an eggplant

Salting an eggplant is only necessary if the eggplant is over-mature and is to be fried (salting the eggplant stops it absorbing too much oil). If this is the case sprinkle the eggplant with salt and leave to drain in a colander for 20 minutes. Rinse quickly to remove salt before cooking.

Also known as bush tomatoes or desert raisins, these tiny tomato-like berries are yellow when ripe but are mostly available commercially in dried form - whole or ground - as a brownish-red fruit with a taste similar to sun-dried tomatoes.
