Taste Of Melbourne

Taste of Melbourne, a four day sampler of local food and restaurants held in the grandiose Royal Exhibition Building, was on over the weekend. SBS put me there. It's a strange event; part trade show; part restaurant simulation. A random assortment of almost a hundred small and large producers were in attendance hocking their wares alongside fourteen of the better known Melbourne restaurants.

Hot Tips

Roasting/toasting spices

Whole or ground spices can be toasted. While the toasting process is the same for both, ground spices may toast slightly faster than whole. Simply place a dry skillet over medium heat. When the pan gets hot, pour in the desired amount of spice.

Glossary

Chaat Masala

A sour blend of spices typically including amchur (dried green mango powder), dried ginger, cumin, coriander and black pepper and used in Pakistani cooking.
