If you go to www.provincialgourmet.com.au you will have access to purchasing Tasmanian Black Truffles, when in season,truffle products and Australian Arabica Coffee. Why buy imports when you can purchase Australian products and support Ausssie producers.
Tasmanian Truffle Enterprise has also been having great success over the years, starting with Tim Terry producing the first black truffle in Australia in June of 1999 in Tasmania.They can also boast about being the only producers of Black Summer Truffle in Australia, from late December to mid February.Whilst the aroma is not as pungent as their winter cousin,they too have been in great demand by international chefs as well as our Aussie chef's.So no, we don't have to rely on imports anymore.

thank you FG but there is more to the story than i previously let on....... i once had a pot of tetsuya's truffle salt that accidently spilt all over the carpet of the lounge room. i proceeded to vacuum up not realising the effect it would have on my vacuum.... i ended up having to throw the vacuum out as everytime i turned it on, warm truffle smells were omitted and filled ever room of the apartment. it has further contributed to my dislike of old, smelly vacuums as well as truffles. lost cause

Claudia - a couple of ideas that might help you enjoy truffles. I grate them finely and put them in between the layers when making a potato gratin. You could also try putting a couple of fresh eggs in a sealed bag with the truffle and then use them to make poached or scrambled eggs. Both recipes give you the earthy flavour of the truffle through the dish without being overpowering.
I met Fran and her amazing companions at the Millthorpe Truffles Truffiere last year and they?re so amazing to watch at work. I wish our dogs were so obedient! We actually sell Millthorpe Truffles in our shop, A Slice of Orange, so thought we better get out there & get our hands dirty to truly understand this incredible food. We had a great day and were lucky enough to see the largest truffle of the season. I believe it was shipped straight to chef in Sydney! Truffle tours: www.urbangraze.com.au
Carli... i love reading about them, love looking at them, fully appreciate how special they are and how much of a science it is... i even attended the truffle markets in Alba, Piedmont Italy and had a personal tour through the champion growers aisle of 2008 and given a minimaster class on how to choose a good one by a most respected Italian truffle judge.. but i just cant seem to enjoy them... in any way in which they are presented to me. i want to like them, i do.

Just found the first Lepiote today also knows on the east coast as Parasol mushroom.
It is a family activity we started with all of our children.
Some years we find five hundred of them we pick them at their early stage of growth when not totally open. They tend to be hard to digest if a little old, and tough.
By the way only eat them if you are with someone who has eaten them many time over many years over a range of soils if possible... and will eat them with you... we eat themMichel

Great article Carli. I look forward to truffle season every year.
In Canberra and around the region we have the Truffle Festival - http://www.trufflefestival.com.au. Lots of restaurants get involved and you can go on truffle hunting tours. It's great that we can support local suppliers and don't have to rely on imports from Europe anymore.

How to cook beetroot
To minimise bleeding during cooking do not peel the beetroot (the skin holds the colour) and leave a portion of the stem in place. Boil in salted water or bake in the oven wrapped in foil at 180°C.

Dovme Biber
An essential ingredient in Turkish cooking. Dovme Biber is semidried, crushed chilli. Look for one that is slightly oily.
