Serendipity or hypocrisy to see recipes for abalone following an article on their endangered status and the depletion of wild stocks due to overfishing and the AVG? Aquaculture does not always satiate the enormous asian appetite for the shellfish; it also stimulates it, leading to more illegal collecting and overfishing of local populations. Why pay when you can poach? Abalone are an integral member of Australia's temperate marine ecology, not just an epicurean resource.
How sad that our obsession with this beautiful food has led to such mass depletion. I have always dreamed of one day eating abalone but unless we move to protect this endangered species I and future generations will never have the opportunity to do so. Thank you Carli for alerting us to this appalling situation.

Living in Canberra abalone isn't readily available but I have had it in Sydney and overseas - mainly as sashimi. It is a fantastic alternative to fish and the stir fry recipe sounds great. Now to find someone that stocks it locally!

Hot Tips
Bread crumbs
You can easily turn unused bread into breadcrumbs. Lightly dry the bread in a moderate oven and then pulse in a food processor until desired coarseness. Do not use stale bread as this will result in stale tasting bread crumbs.
