A blast from the past! The Bombe Alaska is making a comeback. Icecream maker Andrew Lazar creates his version of this ever-fascinating dessert.

Originating from New York City in 1876, the first ‘Baked Alaska’ was created in honour of the newly acquired territory of Alaska. Later thought to have been popularized worldwide by French chef Jean Giroix in 1895 at the Hotel de Paris in Monte Carlo, the Bombe Alaska never fails to win new fans.

Consisting of hard ice cream and in Andrew’s version, a layer of strawberry jam, the ice cream is encased in an envelope of sponge cake. Covered with a layer of uncooked meringue it is then “flamed” (in this case with a blowtorch) before serving.
