Loukoumades are a popular Greek sweet, comparable to a doughnut. They are also known as honey fritters, honey puffs or honey balls.

Made by hand with flour, yeast and water and deep fried until golden brown, they are drenched in sugar syrup and cinnamon before serving.

Loukoumades are most popular in Cyprus and in Australia can be found at any Greek Cypriot club or gathering. Our recipe comes from Mary Loucas, in Melbourne (who just happens to be the mother of Australian Gourmet Traveller editor, Anthea Loucas).

Fresh vs dry pasta

Similarly to pasta shapes, the choice between fresh and dry pasta is more about matching flavours and textures than about which is superior. Fresh pasta is well suited to delicate sauces, but its primary purpose is to make tortellini, ravioli and lasagne sheets.

Glossary

Green Mango

Any unripe mango, used mainly raw - in salads and side dishes. It has a more tart taste than ripe mangoes.
