Nougat, or torrone, is an Italian specialty, made in Australia with native honey and fresh-roasted almonds.

The origins of nougat are believed to link back to ancient Rome where a sweet made with honey, nuts and egg whites was prepared for festive occasions and as an offering to the gods. Italian nougat is often classed as either morbido (soft and chewy) or croccante (crunchy). Both are divine.

Marinating rabbit

Rabbit, a Maltese favourite, benefits from being marinated before cooking. Marinate the rabbit in a mixture of wine, bay leaf and salt and pepper; cover and leave in the fridge overnight. This will ensure a moist and flavourful rabbit dish, whatever the end preparation.
