tips

Pebre

The way the onions are prepared for the Pebre is a revelation and crucial for the right taste and texture. To finely chopped onion, mix through raw sugar and hot water then allow it to stand to mellow the acidity. Rinse and mix through salt in the same way.

Ceviche

Who would have thought sweet potato and raw fish would work so well together! It’s delicious but must be eaten super FRESH.

Asado

Once the coals have burnt down to embers, cover the meat with newspaper and turn the meat every 15 minutes.

Mate

Make it strong. The second cup is always better.
