Black Mustard Seed

Black Mustard seeds add character and bring life to dhal.

Coriander

Coriander seeds are essential in all masala mixes.

Cumin

Cumin black or brown is used in many dishes including curries, rice dishes, breads and chutney.

Garam Masala

Garam Masala (which means spice blend) must include green cardamom, cloves and cassia. It can be bought at Indian supermarkets or made at home.

Turmeric

Turmeric lifts colour in a spinach puree or tomato sauce.

Dhal

Dhal starts out as whole beans, peas and lentils and become dhal when they have been skinned and cooked. They are a staple of Indian cooking and are high in both protein and fibre. There are many varieties of dal including; urid, mung, toor and masoor to name just a few.
