Malaysian laksa (cheat's laksa)

Ingredients

Spice Paste
4-5 shallots, chopped
6-7 cloves garlic, chopped
Thumb size piece ginger, peeled and chopped
1 fresh red chilli (more if you want more kick!)
1 heaped tbsp dried prawns
½ cup water

Broth

12 green prawns
4 tbsp vegetable oil
180 mls of laksa paste
1 litre chicken stock
1 can coconut cream
Fish balls
Fried tofu puffs
1 tsp sugar
Fish sauce
Salt to taste
Juice of 1 lime

Finishing Touches

Rice vermicelli noodles
Egg noodles
Shredded cooked chicken meat (boiled-stock can be used for the broth!)
Bean sprouts
Spring onions, chopped
Red chilli, sliced
Coriander leaves
Deep fried shallots
Fresh lime wedges

Preparation

Process in blender, shallots, garlic, ginger, chillies, dried prawns and water until it forms a smooth paste. Set aside.

Shell prawns and reserve meat. Heat oil in a large pot and fry prawns shells for about 1 minute until they turn red then remove from pan. Add spice paste to prawn flavoured oil and fry for a minute before adding the laksa paste. Fry until fragrant, about 2 minutes and pour in the stock.

Bring to the boil and then add coconut cream. It's always good to allow time to simmer for the flavours to come out. Add fish balls and fried tofu. Add sugar, fish sauce and salt to taste. Squeeze in the lime.

Blanch rice and egg noodles in boiling water and transfer some of each to serving bowls. Poach reserved prawn meat in same water. Pour over the broth and top with chicken, prawns and bean sprouts. Garnish with the spring onions, chilli, coriander and fried shallots. Squeeze in the lime before eating.

Really a cheat's laksa alright!
CHEAT's laksa alright! From watching video I can see the laksa gravy is not even orangey-red enough,and VERY diluted. You will never get the kind of authentic M'sian/S'porean style laksa if you do it this way. Also, we NEVER use FRESH chillis. Always DRIED red chillis and have to be soaked in hot water beforehand. Totally agree with Steve why safari is cutting cost to use novice student for a highly traditional dish as this. This probably suits Caucasian taste, but Asian taste no way!!

This was so easy and tasted great! With a shellfish allergy, I was concerned that it might not taste as good without the dried prawns in the spice paste. I was wrong!

Billed as a quick Laksa I eventually after much toil sat down to something akin to a 'Pot Noodle'. Honestly SBS, we're supposed to be on a Food Safari not quick-student-noodle option.

The laksa paste i used on the show was a brand called 'Tean's' which i got from an asian grocery store in Randwick, though almost any brand will do with equally good results. good luck!

Very tasty...
This was a very tasty and fragrant dish. Although it takes a little bit of extra work than other laksa recipes I have tried, it is definitely worth the effort. I left out the fish balls and chicken and found it was still a delicious meal and very satisfying. I'm not sure where to find the laksa paste used in the recipe, I just used whichever one I could find at my local Asian grocer and it worked fine. Number of people it serves? 2 for a large meal and 4 for smaller servings (3 prawns each).

Which laksa paste?
Hi, I looked carefully in the video, Aryan had a different paste (when she was pouring some into the pot) than the one showed at the grocery scene. Aryan's laksa paste was a maroon coloured bottle as oppose to the white bottle. Just wondering, what brand did she use and where can I get that? Thanks

Awesome!
This is the best laksa I've ever made. It's now a regular on our menu at home! And Bruce, if you care to read the recipe properly you'd know to put 1 heaped tablespoon of dried prawns in (I assume that's what you're asking??) Awesomest Laksa Ever!
