Chicken schnitzel

Ingredients

2 large chicken breasts
1 cup plain flour, seasoned with salt and pepper
1 egg, whisked with 1 tbsp water
2 cups dry breadcrumbs
500ml vegetable oil

Preparation

Place chicken breast on chopping board and with a sharp knife, slice evenly through to create 2 or depending on thickness, even 3 thin escalopes of chicken. Flatten out to even width with a meat mallet.

Lay out three large plates ready to coat the chicken - one with seasoned flour, another with egg mix, another with breadcrumbs.

Using one hand, lightly coat the chicken with flour, shake off excess, dip each side into egg, then coat with breadcrumbs.

Heat a deep frying pan with the oil and one or two at a time, cook the chicken schnitzel, turning over once the underside turns golden brown.

Prepare a draining bowl - a deep sided bowl filled with crumpled absorbent kitchen paper and stand the cooked schnitzel upright so more of the oil is able to drain away.

Serve with potatoes- mashed, boiled or fried.

Try this...
To add a bit of zing to the crumbs, I added some finely chopped parsely & a little bit of very finely grated lemon rind. Also fantastic served with a light, creamy mushroom sauce & accompanied with a salad or steamed vegetables.

Loved it!
I cooked this for my hubby and toddler and they loved it. Nice, thin & crispy! The only change i did make was add salt & pepper to the flour (gluten free for my portion) and used crushed cornflakes instead of breadcrumbs and its super crunchy. It fries up to so quickly i love it.

Liven Up the Crumbs a Bit!
I like to liven up the coating a bit using a blend of ingrediants. Try a blend of breadcrumbs and oats, mixed with a little grated parmesan cheese and chopped parsley. Or Panko breadcrumbs which can be found in the Asian sections of large supermarkets are fantasic.

Have been to corner 75 and , yes, he does make the best schnitzel. I am having a dinner party tomorrow and will follow his recipe, I thought one should use olive oil but as he used vegetable oil so will I. His restaurant is a delight- warm and friendly and anything you order there is good, authentic and tasty Four star
