Bean skordalia
Skordalia is a sauce or dip usually based on potato and flavoured with garlic, olive oil, lemon juice and parsley.
Here is George Calombaris' simpler version.
Preparation
Simply drain a can of cannellini beans and puree with lemon juice, garlic and lots of olive oil until smooth.
