Preparation

Measure an espresso cup per person of water into the 'briki' Greek coffee pot.

Add 1 large heaped tablespoon of coffee per person.

Add 1 teaspoon of sugar if desired and stir slightly.

Place on stovetop over high heat. When coffee just comes to the boil and there is a thick layer of foam (Kaimaki) on the top, remove from heat and let it stand for about 15 seconds for the foam to settle. Pour into cups and serve.

Pour or spoon a small amount of foam into individual cups then carefully pour coffee into cups so that the foam remains on the surface.
