Mango pudding

Cuisine: Chinese Created by Rosetta Lee

Ingredients

6 tsp powdered gelatine
¾ cup caster sugar
1 litre soft mango ice cream
75ml evaporated milk
1 cup crushed ice
1 large mango, peeled seeded and diced

Preparation

Stir gelatine and sugar into 1 cup of boiling water until thick and syrupy. Slowly pour into a glass bowl. Stir in ice cream, evaporated milk, crushed ice and diced mango.

Ladle into bowls or glasses and chill for about 2 hours until set.

Just to clarify my previous comment about melting the ice cream with a saucepan and heat, you stir in the gelatine/sugar mixture while the melted ice cream is still warm/hot. Take it off the heat so it is not scolding, let it settle for a few minutes and then fold in the gelatine/sugar mixture. It is the heat/warmth that allows the gelatine to bind the whole mixture You can also use ordinary pouring cream rather than wasting a can of Evaporated milk (450gr) unless you purchase a small can.

After one flop following the exact recipe, I worked it out. We had to do a whole patch for a party, someting like 100 serves. The Ice Cream has to be melted down completely, ( we used a saucepan on low heat, after which you can then fold in the gelatine/sugar mixture. We folded in diced mango pieces, no problem nor adverse reaction to the gelatine nor the quantity of gelatine. The recipe is fine, just melt the icecream down to a creamy context then add in the gelatine.

Why didn't it work?
So we followed the recipe with the exception of using a tub of Weis' Mangoes and Cream ice-cream instead of straight-up mango ice-cream (which we couldn't find in Woolies or Coles. Admittedly we didn't think to check Franklins, IGA or Audi). IT DIDN'T WORK. The "pudding" sat like sludge in the plastic cups and even after trying to let it set overnight, we could tip the cup upside down and everything in it would just slop with gravity. Why?? Has this recipe worked for anyone?

If you watch the video, it is obvious that she is using more than 6 teaspoons of the powdered gelatine. It actually looks like more than the caster sugar, so i'm guessing maybe 6 tablespoons instead. I'll try it with tablespoons, and update if it works or not.

The mango pudding did not set
Just wondering if anyone has tried to follow this recipe and ended up with a mango pudding that set firmly? I followed the recipe and ended with a mango splurpee!! It said to put 6 teaspoons of gelatine powder, it appeared to be insufficient for this recipe. I would appreciate if someone can help me out.

Anybody tried this?
I tried this recipe twice without success yet... will try really melting the icecream next time Master Sushi, you can find evaporated milk at the supermarket, normally they are stocked next to condense milk and long-life milk.

Easy mango pudding
I have an easy recipee, 1 pkt mango jelly crystals, 1 cup evaporated milk, 1 mango pureed. I make up jelly with 1 cup boiling water. Wait for it to cool and add it to the evaporated milk and mango. I then set it in the fridge.

Cindy, Try the Weiss bars - you may need a number of them though. Otherwise have a look in the expensive part of the freezers - should be some there - good luck
