Grits
Similar to polenta, grits is made from ground corn – except that it’s a product of Hominy (which is corn soaked in lye water to remove the outside shell of the corn kernel). This is then dried and ground so that it’s slightly coarser than polenta.
Ingredients
2 – 3 cups water
2 cups grits (or instant polenta if you can’t find the real thing)
Salt and pepper to taste
2 tbsp butter
Dash of buttermilk
3 tbsp grated extra tasty cheese
Dash paprika (optional)
Preparation
Heat water until almost boiling then add grits. Add salt and pepper and butter and stir through until it starts bubbling back on the boil. Then add a dash of buttermilk and stir through cheese and paprika.
It is ready to serve when the consistency is that of mashed potatoes.
Note: Grits can also be made with goats cheese and semi dried tomatoes – cook the grits and add these goat’s cheese and dried tomatoes, butter, cream, salt and pepper.
