Kafta

Cuisine: Lebanese Created by Fouad Sayed

Ingredients

1 cup finely chopped parsley
500g each lamb and beef mince
1 large onion, finely chopped
1 tsp salt
½ tsp white pepper

Preparation

Combine all ingredients in a large bowl and using your hands knead the mixture until smooth. According to Foaud, the secret to good Lebanese food is ' the touch of the hand'.

Dampen your hands with water and shape the mixture around skewers. Barbecue until golden brown and cooked through. To serve, split and open out flat bread and fill with tabouleh. Top with a kafta, close over the bread and use that to hold the kafta while you remove the skewer. Use torn off pieces of bread to pick up some of the kafta and tabouleh.

Bhar Helou ingredient
Adding 1 tspn of Bhar Helou to the mix in this recipe adds a beautiful touch. Bhar Helou is a spice combination of black pepper, cinnamon, cloves, nutmeg, fenugreeek, etc. Available at Lebanese/Middle Eastern grocery stores, often just refereed to as 'mixed spices'.

Simple and most excellent
I made these for a New Year's eve party. A delicious and simple BBQ food. Served with home-made tabbouleh, hoummus and pita bread. Grilled on a wood-fired Weber.

Beautiful!
I have made these at least 4 times since watching them on the programme. Such wonderful summertime food and perfect as we approach Australia Day with our love of lamb and all things that make up our wonderful and diverse multicultural nation. Like Claudia, I too serve them with Lebanese flatbreads and the tabbouleh from the same programme ( I was surprised how quick and easy it was to make and vow never to buy another tub of the supermarket stuff again) Delish!

pretty good
I made these and they were great, i didn't get the opportunity to cook it on the BBQ as it was raining outside, so i put them under the grill and they came out great!! I also made the tabbouleh and that went well with it in the lebanese bread. Will definitely make again

careful. you need wide skewers or they break apart. a nice dish.
