Burghul pilav


Cuisine: Turkish Created by Ishil Ihtiyar

Ingredients

¼ cup Turkish olive oil
2 small onions, chopped
1 tsp red pepper paste (biber salçasi)
3 tomatoes, diced
Salt and pepper
2 cups burghul, washed
4 cups chicken stock

Preparation

Heat oil in a pan. Add onion, red pepper paste and tomatoes and season with salt and pepper. Cook for a few minutes until softened.

Stir burghul until coated. Add stock, cover and simmer for 15 to 20 minutes until all of the stock has been absorbed.

healthy quick lunch
delicious. this probably isn't traditional but at the end i threw in a lot of finely chopped parsley and a generous lemon squeeze to make it a salady thing for lunch.

A different take on pilav
I am looking forward to making this pilav as I never include pepper paste or tomatoes to it.

This has become one of my fave carbs to have with curries/Middle Eastern dishes. I was advised by a Turkish deli in Mentone to buy the 'Oncu' brand of red pepper paste. It packs a real punch! I have since used the red pepper paste in all sorts of chicken/veg one-pot dishes that go with the burghul pilav. What's best about burghul is its low GI, unlike rice. Tops!

I've made this recipe a few times now, but without the red pepper paste, it is delicious. I've finally found the Red Pepper Paste and am going to make it today. I'm going to serve it with prawns, I don't know how traditional that is, but I'm sure it will be yummy.
