Carrot dip (yoghurtlu havuc)

Cuisine: Turkish Created by Esma Koroglu

Ingredients

6-7 carrots
2 tsp olive oil
1 clove garlic
200g creamy Greek style yoghurt
Pinch of salt
Black olives 
 

Preparation

Coarsely grate the carrots and cook in a pan with olive oil until just softened. Remove from pan and set aside to cool.

Meanwhile, grate the garlic into the yoghurt, add salt and mix well. Add cooked carrot and stir to combine. Decorate with olives and a little extra drizzle of olive oil.

Some differences
When ever I make this dip, I use Greek Style Yogurt (its thicker & tastier). I grate the carrot finely (rather then the thicker grating she has used I use the smaller grate - other side of the grater). Cook the carrots with butter, add salt and the garlic directly into the saucepan. When the carrots have softened allow to cool and then add to the yogurt. Add extra garlic and/or salt if required, please try it.

This recipe is fabulous. I added a bit of lemon and smoked paprika too. Have made it a number of times for feeding a large crowd and its the first dip to go.

Very sweet
Had a sample of it at a friend's without the olives - loved it! Lots of garlic made it very good.

Deliciously different
I made this for a Christmas bbq and every one thought that it was so very different to usual dips. I agree with the idea of adding the cumin and sweet paprika and lemon. I serve this dip with toasted pita bread sprinkled with sweet paprika. I toast the bread under the grill after spraying it with oil; then sprinkle the paprika. It is also a great low fat suggestion for any party.

A few changes
I add a teasp. ground cumin, 1-2 teasp sweet paprika and a sqeeze of lemon and omit the olives. Delicious with Turkish bread
