Pistachio semolina cake

Cuisine: Turkish Servings: Makes six large muffin size cakes Created by Gulbahar Kaya

Ingredients

5 medium eggs, separated
1 tbs plus a pinch of sugar
Zest of 1 orange
50g fine semolina
50g plain flour
100g ground pistachio nuts

Syrup
600ml fresh orange juice
Zest of 1 orange, extra
500g sugar
300ml cream
300ml Greek style yoghurt
2 oranges, peeled and cut into segments

Preparation

Preheat oven to 180C. Grease a large muffin tray with 6 holes.

Beat egg whites with pinch of sugar until stiff and set aside. In a separate bowl, beat egg yolks with the remaining sugar and orange zest until pale.

Add semolina, flour and ground pistachios to the egg whites and partly mix through. Add egg yolks and fold through until combined.

Spoon mixture evenly into the muffin holes. Bake for 30 minutes.

Prepare the syrup. Place orange juice, zest and sugar into a saucepan. Stir over medium heat until sugar has dissolved, then simmer for 10 minutes until reduced by half and syrupy. Cool.

Whip the cream until thick and stir in the yoghurt.

To segment oranges, peel oranges using a small sharp knife, removing all of the white pith and cut between membranes.

Ladle the cooled syrup over the hot cakes while they are still in the muffin mould and set aside for at least 10 minutes (or longer if you prefer the cakes softer).

Serve the cakes with a little extra syrup, whipped cream mixture and orange segments.

One of the most delicious desserts - I made it with Splenda (to reduce the sugar) and it worked beautifully making it quite a healthy receipe. I agree that the cream & yoghurt was a perfect addition and have used the mixture for other receipes that are served with cream.

Gorgeous to coin a new food descriptor
These are fantastic - not too sweet and easy to make. Light cake and the orange complements them perfectly- a real hit with pistachio lovers. Yogurt and cream mix delicious and an advantage for those who have to watch fat content. I even used part Splenda to cut down on sugar in syrup - definately one for the family favourites

i made these at school for an assessment and my teacher and parents loved them! syrups a bit fiddly but they were pretty popular!!

These we absolutely devine!! I can't believe that the rating is at 1 star! They we light and fluffy and the yoghurt complimented the sweetness of teh orange perfectly!! I've made this recepie 3 x times now and They get better each time!! (Incidentally, I would have rated this recepie 5 star but the form would only allow me to select 3.)
