Citrus cured kingfish

Ingredients

1 side Kingfish
3 oranges
1/4 cup salt
1 tspn ground fennel seed
A few sprigs of thyme
1 ground star anise
 

Preparation

Zest and juice oranges.  Clean the blood line out of the fish and remove the bones. Sprinkle half the amount of salt on fish. Sprinkle on ground fennel seed and ground star anise, zest and thyme.  Cover with orange juice and the remaining salt.  Refrigerate for 24 hours.

My mother used to make a variation of this which was to use white fleshed fish cooked then left to cool down. The fish was then de-boned then she would add olive oil finely choppped garlic and parsley lemon juice added and spread over the fish and then left to cool in the fridge before serving but just before serving a slight dash of fresh olive oil added oh it was so delicious.
