French onion soup

Cuisine: French Created by France Vidal

Ingredients

60g unsalted butter
4 -5 brown onions, peeled and finely sliced
50g flour
2 litres water
1 glass white wine
100g French Gruyère cheese, ½ cut into cubes and ½ grated
1 baguette
Salt and pepper

Preparation

Melt butter in a heavy saucepan, add onion then cook for 25 minutes until the onion is deep golden brown and beginning to caramelize. Stir from time to time.

Add flour and stir for 2 minutes.

Add water and wine and season with salt and pepper.

Add cubes of cheese, stir and bring to the boil.

Cover and simmer for 20- 25 minutes. Check seasoning.

Slice the baguette, sprinkle with the remaining cheese and grill until the cheese is melted.

Put the soup in a serving bowl and serve with the toasted baguette on top.

Easiest and most rewarding soup ever!!
I just wanted to let everybody know that this soup is extremely delicious and very very easy to make. The Gruyere cheese is the star of this dish as it gives the soup its rich and creamy flavours but also adds to the texture as well. It's hard to believe that these simple ingredients can create such a delicious meal!! One of the best soups I have ever made yet so simple!!

I have made this soup before and I added beef stock rather then just plain water. I didn't use the cheese because I didn't have any or wine because I don't drink, and it tasted great. I will be making it again tonight and include the cheese (jarlesburg) and the toasted bread with the cheese.

Made it last week. Instead water I cooked with light chicken stock (home made). It takes a bit more than 25 minutes. The final result was amazing. Will be making again and again during winter. Awesome.

Use beef stock instead of water...double & grate the cheese
I've just put down my spoon...yum! I also found it to be too watery and flavourless to start off with. However, I added 1 1/2 beef stock cubes, and 100g of cheese whilst I was checking the seasoning...and it took on alot more body. The beef stock helped the seasoning so much. Also, I made sure I used a really good european butter which made the onion beautiful and creamy. I couldn't find french guyrere in my supermarket so used swiss...would love to know what the difference in flavour is.

Disappointing!
I tried this last night - was very bland and watery! I love the TV show and got the recipe book as a present, but some of the recipes just don't taste as good as you think they would (and it's not my cooking!!). I wonder if they test the recipes before publishing them?

Gruyere Cheese
If you find French Gruyere generally an expensive cheese to use , Mainland now do a Gruyere and its very affordable for a 200g block. I found it at Coles. Its very tasty and worked super well with this recipie.

Try with red wine
Have not tried this yet but thought this classic french onion soup is done with red wine? I tried this from a cookbook recipe that uses only red wine (no water or stock) and it was delicious, just a suggestion.

Cheese!
I like most others am making this with veggie stock and am finishing it off with some finely chopped chervil. It smells amazing, I'll report back on the flavour. Kat - Use a dry white for this recipe - a blend is fine. Charlenne - it shouldn't make too much of a differece as the dominant flavour is definitely the onion. Just make sure you get a "good" Swiss and not packet singles or something!

like Fiona i found it very watery and bland. i followed the recipe exactly but next time I'll try more onions and 1 1/2 litres of a good vegetable stock not 2 litres of water. i haven't given up hope on Food Safari yet!

Needs Stock
I thought i would try this version but found it definately needs stock instead of water. Did any one else find it too watery and a bit tasteless?

Made it, will make it again :D
Delicious. I was unsure whilst eating whether I had made it correctly; my result was quite clear (although still a good brown) and the soup on the program looked richer. I didn't have butter or white wine, so I subbed olive oil and beer for an Aussie touch ^^ I'll be making this again, so simple but so good!
