Black spaghetti (Sicilian pasta nera)

Ingredients

3 cuttlefish fillets
1 brown onion, diced
4 cloves garlic, finely chopped
1 large tin peeled tomatoes
1 bottle of Italian homemade tomato sauce
1 small can tomato paste
1 large or 2 small ink sacs from inside the cuttlefish
2 x 500g packets thin spaghetti

Preparation

To prepare the cuttlefish, clean and cut into short, thin strips.
In a warm fry pan, dry the cuttlefish, removing the excess liquid.  Put to one side.

 Brown the onion and garlic.
Add tomatoes, tomato sauce and tomato paste.  Before the mixture comes to the boil, squeeze in the cuttlefish ink.  Make sure the sauce doesn’t boil or the mixture will curdle.

Add cuttlefish pieces and simmer for 30 minutes.

To serve, cook spaghetti and serve with the cuttlefish sauce.

You can buy squid ink in a jar from the fish markets or any good deli.

You should try it before you comment. Squid or Cuttlefish ink although disgusting looking is one of the nicest sauces as long as you are using good quality fresh ink.

I used to have rice for this recipe with calamari in tin (Trident brand) and the colour was not very black. I love it. Can anybody tell me were to get the calamari in tin?

Ugh..........not very sicilian
I'm sorry, but that pasta nera didn't look very appetising. Why would you want to blacken a beautiful red sauce? I think it would have been more appropriate to make the actual pasta black and not the sauce, as is traditionally done in Sicily, then serve it with you seafood.

is it possible to buy separately from the cuttlefish their ink sacs - for its hard to distinguish all the insides of the cuttlefish before cleaning
