Anise
A small, annual plant that is a member of the parsley family. The leaves and seed have a distinctive, sweet liquorice flavour. The anise seed flavours a variety of confections, savoury dishes and drinks.

Different paprikas
When using paprika make sure you are using the right variety for the dish you are cooking. The Spanish smoked paprika is ideal for paella, while the Hungarian sweet paprika is quite different in flavour and is ideal for their goulash.
Glossary
Katsuoboshi Kezuriki
A plane contained in a box used to prepare katsuobushi (dried smoked bonito) shavings.
