Mangoes
Native to India, these popular fruits are now grown around the world, including northern Australia where they are in season from spring to late summer. There are dozens of different mangoes grown in Australia. The season starts in October in the Northern Territory and continues through Queensland to the NSW North Coast. The most commonly found mango in Australia is the Kensington Pride, also known as the Bowen mango. It is sweet with a slightly pungent mango flavour, a large stone and slightly fibrous flesh. Mango varieties differ in colour (from deep purple Irwins through to vivid red Van Dykes), texture (from the more fibrous varieties to the smooth, slender-stoned Keitts, for example) and flavour - from sugar sweet like the American favourite Tommy Atkins to the more pungent, slightly creamy Nam Doc Mai. There are banana mangoes, named for their hooked shape, not their flavour, and huge round heavyweights like the newer breed R2E2. (Yes, it does sound like something from Star Wars!)

Peeling and de-seeding tomatoes
To peel and de-seed a tomato, score a small cross in the base of the tomato with your knife; plunge in boiling water for 1 minute, refresh under cold water (running water seems to make peeling easier too); cut in half and scoop out seeds with a dessert spoon.
