Mexican (Ibarra Brand) Chocolate

Used to make Mexican hot chocolate and other Mexican recipes including the famous mole poblano, this is a plain dark chocolate that can be found sweetened with sugar and spiced with cinnamon, or unsweetened. It is sold in flat round blocks and broken off in triangular pieces.

Floury vs. waxy potatoes

Waxy potatoes tend to hold their shape and remain firm and compact when boiled. Floury potatoes become fluffy and airy inside and are best used for baking, roasting, mashing and deep-frying. Due to their low sugar content they tend to fall apart when boiled.

Glossary

Lassi

A traditional Indian drink that used to be made from buttermilk with salt added to combat dehydration in the hot climate. These days it is made from thin yoghurt, with salt or sugar.
