Quandongs

Also referred to sometimes as the "native peach" due to its variegated stone, quandongs are a sweet-tart red desert fruit that have long been used in country-style pies and jellies. A semi-parasitic plant, the quandong (santalum acuminatum) has long survived in the wild and was much favoured by indigenous Australians, who used to dry the winter crop for summer eating. It also had medicinal uses. The other interesting fact about quandongs is that there are about 100 different varieties of the fruit, with different textures and colour combinations.

Chopping an onion

Cut the onion it in half across the base (leaving a portion of root on each half - this will help keep the onion together while slicing), peel the onion and place cut side down. Make multiple cuts long ways from top to bottom but not through the root at the end. The more cuts, the finer the dice.

Glossary

Sunyak bah

A Nigerian spice a little like a tiny gourd in appearance. Only the seeds are used. They are slightly peppery in flavour.
