What to look for in fresh fish
Seek out fish that have firm flesh, clear bulging eyes and a slimy texture - a sign that the last time they had contact with the water was when they were swimming in it (by dry-filleting fish you avoid bloating and any taint from chemicals such as chlorine).
Glossary
Buckwheat
An unusually shaped grain, a little like a diamond in shape. It is not a cereal but a broad-leafed leguminous plant. Buckwheat is used ground for Japanese soba (buckwheat noodles) and in many European cultures.

Give your sommelier the night off. Pizza has no better friend than a cold beer to cleanse the palate and complement the flavour. If you’re a dedicated gourmet, match a margarita pizza with a James Squire Golden Ale, a meat lovers with a James Squire Amber Ale or a spicy pepperoni with a James Squire Pilsener.
