Healthy celery soup recipe

This soup is easy to make, has no saturated fat, is low in sodium, and is suitable for vegetarians.

Ingredients

2 tbsp rice bran oil
1 head of celery, including the leaves, finelysliced
1 large onion, finelysliced
500ml-1L of vegetarian-style chicken stock (try Massel brand)
1 heaped tsp white pepper

Preparation

Heat the oil in a large pot over medium heat. Add the onion and celery. Cook, stirring gently, for 5-10 minutes or until the onion is soft but not browned. Add the stock to cover. Bring to the boil, then cover and simmer for 30 minutes. Remove from the heat.

Liquidise the mixture using a stick blender. Serve hot with toasted pide.
