Pork-mince soup with rice noodles and bitter melon recipe

This one's very quick and healthy.

Ingredients

3 tbsp peanut oil
1 onion, chopped
3 garlic cloves, chopped
1 small bitter melon, chopped
500g pork mince
2 tbsp fish sauce
1 1/2 litres chicken stock
150g rice noodles

Note: You can substitute bitter melon for 4 potatoes if you like.

Preparation

Heat the oil in a large saucepan. Add the onion, garlic and bitter melon (or potato) and saute for a few minutes. Add the pork mince and cook for a further 3 minutes. Add the fish sauce and stock, and boil for about 10 minutes. Reduce heat to medium, add the rice noodles, and simmer for 4 minutes. Remove from heat.

Season with salt and pepper. Divide among bowls and serve.
