This recipe takes a bit of work, though it's an amazing dish that's worth the effort. Whenever we have a dinner party, the guests ask beforehand, "Are we having African chicken?". There is a marinade and a sauce. For the preparation time, I've only mentioned how long it takes to prepare the ingredients, not including marinating. Overnight is best.
Ingredients
2 small whole chickens, cut into chunky piecesCorriander leaves, to garnish
Marinade
1 large onion, finely chopped
4 cloves of garlic, crushed
200ml coconut cream
2 tbsp lemon juice
1 tbsp tomato paste
1 tbsp ginger, finely grated
1 tbsp lemongrass, crushed, finely chopped
2 tbsp light olive oil
1 medium chilli, finely chopped (or 2 tsp sambal oelek)
1 tbsp paprika
1 tbsp turmeric
Sauce
1 tbsp light olive oil
1/2 large onion, finely chopped
4 cloves garlic, crushed
1 tsp curry powder (Ayam brand is perfect)
2 tsp sambal oelek
1 tbsp ginger, finely grated
4 tbsp desiccated coconut, lightly toasted (in a dry frypan)
2 tbsp peanuts, crushed, lightly toasted (in a dry frypan)
1 tbsp lemon juice
1 tbsp tomato paste
1 tbsp brandy
1 tsp palm sugar
100ml cream
200ml chicken stock
1 tbsp paprika
3 Kaffir lime leaves, finely chopped
Preparation
Combine all the marinade ingredients in a large bowl. Add the chicken, then mix to coat, and marinate for at least 8 hours.To make the sauce, heat the olive oil in a frypan over high heat. Add the onion, garlic and curry powder, and saute for 5 mins. Add the sambal oelek, ginger, coconut, peanuts, lemon juice, tomato paste, brandy, palm sugar, cream, stock, paprika and lime leaves, and season with salt and pepper.
Gently cook over medium heat for 15-20 mins or until the sauce reduces and thickens.
Roast or chargrill the chicken, basting with leftover marinade until cooked.
Garnish with corriander and serve with sauce.
