Red cabbage coleslaw recipe

This is a twist on an old favourite, coleslaw. Instead of white cabbage, we use red, and a different dressing to the usual.

Ingredients

Red cabbage, finely sliced
Fresh radish, skin removed, shredded
Fresh beetroot, skin removed, shredded
1/4 red onion, finely sliced, optional
1 orange, segmented, juice kept aside
Fresh mint leaves, thinly sliced

Dressing
1/2 cup plain Greek-style yoghurt
1/4 tsp mustard powder
1 tsp honey

Preparation

Place the red cabbage, radish, beetroot and red onion in a serving bowl. Pour in the juice of orange. Stir the mint through and lightly season with salt and pepper. Divide the coleslaw among serving plates.

To make the dressing, combine the yoghurt, mustard powder and honey in a small bowl. Drizzle over each serving as desired.
