  • Cuisine: Italian

Ingredients

2 kg chuck steak & lamb necks (cut into chunks with the bone)
1 large onion, chopped
1 clove garlic
4 bottles of tomato sauce (home made if available)
1 bunch fresh basil
4 tsp salt
Olive oil
Water

Preparation

Cover the bottom of a thick-based pot with oil.  Fry the onion, when translucent add the crushed garlic. Place mix of steak and lamb necks across the base of the pot and turn to brown evenly. Then add enough sauce to cover the meat. Add salt and basil to taste. Save some basil for garnish.

Bring to the boil. Then lower the heat and cook for at least 1½ hours, stirring occasionally – if it gets too dry, simply add some water.

Serve the sauce on pasta and the meat can be served separately with salad.

An incredibly delicious recipe - husband wants it over bolognaise anytime! We broke the meat up a little and had it on top of the pasta (as well as the sauce, obviously). And not to break with tradition - but we just used a bought bottle of passata and it was still incredibly yummy, so if some of you don't have time to make the sauce yourself, this is a very good alternative. Thanks SBS. Looking forward to trying the other two recipes.

I have enjoyed the 2 shows so much. The Italian one in particular, such simple ingredients, making a feast fit for a king. Ditto with the Tomato Sauce!! I loved the way all the family were involved in making the sauce. Keep up the great work!

I would like the details for the home made tomato sauce as we have been making our own sauce for the last few years, we also have one of the machines used in the episode. There were a few little tricks to making the sauce with would help with the quality of the sauce. What a fantastic programme!!

Hot Tips

Red wine or white wine?

The general rule with wine is that red wine, with its richer and deeper flavours, is a great accompaniment to red meats, while white wine works well with white meats (fish and chicken). However take time to experiment, there are plenty of exceptions to the rules and with wine the rules are definitely made to be broken.

Glossary

Sesame Oil

Sesame oil has a rich nutty flavour and is used in sauces, stir-fries and marinades.
