Sweet-and-sour pickled onions recipe

Ingredients

500g pearl onions
400ml white wine vinegar
20g sea salt
100g brown sugar
2 tsp black peppercorns
1 tsp cloves
2 dried chilli peppers

Preparation

Cover the onions with boiling water, remove their skins, and blanche in boiling water for 2 minutes. Remove and leave to drain.

Bring the vinegar, salt, sugar, peppercorns, cloves and chillies to the boil.

Place the onions in a sterilised jar and fill up with the hot vinegar mixture so that all the onions are covered. Close and leave to steep for two weeks before consumption.
