Ingredients

1 onion, coarsely chopped
3-4 garlic cloves, chopped
2 bay leaves
¼ cup good-quality olive oil
2kg tomatoes, coarsely chopped (you can use a combination of varieties, eg roma, cherry, gardener’s delight, tigerella)
2 tbsp tomato paste
Fresh basil leaves, coarsely chopped
2 tbsp chopped fresh oregano
½ tsp sugar (optional)

Preparation

In a large saucepan, add the onion, garlic, bay leaves and olive oil. Cook, stirring, until the onion softens and becomes translucent.

Peel the tomatoes by scalding them in boiling water first, so that the skin comes away easily; and/or you can de-pip the tomatoes using a sieve. Add the tomatoes to the onion mixture.

Mix the tomato paste with a cup of hot water and add that to the saucepan, along with the basil and oregano.

Add salt and pepper to taste. You can also add half a teaspoon of sugar if you wish.

Reduce heat to low and simmer, stirring occasionally, for 2-4 hours or until thickened and the excess liquid has reduced completely.

You can use the sauce for pasta, pizza and lasagne, or add anchovies, mushrooms, olives to elaborate on the theme.

Smoking with paperbark (native Aust)

You can use Australian native paperbark in place of baking paper when cooking en papillotte. Simply fold the paperbark around a fillet of fish (including any other herbs and spices) and fold the open ends inwards. Secure with string (as you would tie a birthday present) and cook on the barbecue. Paperbark is not edible.
