Los Amates chef Arturo Morales shares his recipe for quick-and-easy quesadillas, a Mexican snack comprising a tortilla packed with cheese, plus any ingredient of your choice, folded, then cooked on a non-stick pan and served with hot sauce or guacamole.

Ingredients

6 corn or flour tortillas
200g shredded tasty cheese
100g an ingredient of your choice (you might like to try refried beans, ham or zucchini flowers)
Oil, to grease
Hot sauce or guacamole, to serve

Preparation

Place the tortillas on a workbench. Top half of each tortilla with cheese and the ingredient of your choice. Fold each tortilla in half.

Heat the oil in a frypan over low heat. Add the folded tortillas and cook until the cheese melts and the tortillas are crisp.

Cut the tortillas in half and divide among serving plates. Serve with hot sauce or fresh guacamole.
