Carrot halwa recipe

Ingredients
1kg carrots, grated
100g ghee plus 1 tbsp extra
200g sugar
7 cardamom pods, crushed and seeds reserved
10 natural almonds, slivered, plus extra to garnish
10 pistachio nuts, slivered, plus extra to garnish
4 tbsp milk powder
1 tbsp ghee
2 tbsp cream
Preparation
Microwave grated carrots in a microwave zip lock bag for 10 minutes.
Melt 100g ghee in a non-stick pan over high heat.
Add cardamom seeds and stir for 2 minutes until fragrant.
Add carrots and continue to fry over high heat for 2 minutes.
Add slivered almonds and pistachio nuts.
Stir occasionally and continue to fry until ghee starts to separate from carrot mixture.
Add sugar and mix well. Cook another 5 minutes over medium heat.
To make milk sauce, mix 1 tablespoon ghee, cream and milk powder together.
Microwave for 30 seconds and stir well. Return to microwave for another 30 seconds and stir again. Add to carrot mixture and stir over high heat for 2 minutes.
Serve hot, garnished with additional nuts and a scoop of vanilla ice cream.
