Somer Sivrioglu, a Turkish chef living in Sydney, owns Efendy Restaurant in Balmain, which serves both traditional and fusion Turkish food.
This is an Ottoman-style dish which used to be served at the taverns/mezze bars in old times by non-Muslims. It has been also known as the welcoming dish for their customers after Ramadan.
Ingredients
4 fresh blue mackerel3 onions, chopped
2 tbsp pine nuts
2 tbsp currants
2 cups cracked rice (or short grain rice)
2-3 tsp salt
1 tsp sugar
2 tsp pimento
2 tsp ground cinnamon
1 tsp black pepper
2 tbsp oil, for frying
3-4 eggs, whisked
1 cup plain flour
1 cup breadcrumbs
Preparation
To clean the fish, open and remove the gills and internal organs. Massage the fish for 10-15 minutes. Using a dry cloth to hold the fish, break the tail and head, and then slide the bone out. Then, remove all the flesh from inside (reserve for later) to create room for the stuffing.To make the stuffing, soak the rice in warm water for 1 hour before cooking. Drain
Heat oil in a frypan and cook the onions until brown. Add pine nuts, flesh of the fish, currants, rice and salt, sugar. Cook, over low heat, until the rice is al dente. Add the pimento, cinnamon and pepper. Remove mixture from heat and set aside to cool slightly.
Gently spoon the stuffing into the fish.
After stuffing the fish, double coat it with plain flour, followed by the egg, and then the breadcrumbs. Heat oil in a frypan and cook the fish until the breadcrumbs are golden.
