Fawyza demonstrates that this bread is all about technique.  Years of watching and practice make the cooking process over an upturned wok, look very easy for her. In Iraq, this bread would be made an an oven similar to a Tandoor oven.
 

Ingredients

Mix yeast with warm water.
1 kilo flour
2 tsp salt

Preparation

Place towel over basin and leave for 15 minutes to rise. Knead some more and then leave for 2 hours. Break into handfuls and work each  piece into a round flat shape before placing on upturned wok over an open flame. When it begins to rise, turn over.

This bread looks so delicious. It reminded me of the traditional lebanese saj bread with cheese or zaatar on it .

am very happy that all of you are interested in trying my mum's cooking! it makes me very proud. as for your questions: Lisa Gormley: it depends on how big u want to make the bread and how much flour u have. Robyn: if u are making one kilo of flour, than one cup spoon should do the job....all depends on how much flour u want to do.... enjoy it and i hope i helped! regards, Shahad

Loved the bread idea - the wok - what a hoot that would be. I make bread all the time, sour dough, pitta's, foccacia's etc I am going to try this. BUT I want to know how many serves this quantity would make?
