Boat congee is a popular food in the Canton region and it's available all year round.

Ingredients

1 cup of rice
1 tsp oil
Pinch of salt
1 cup pork crackling
1 cup pork stomach
1 cup pork liver strips
1 cup shredded pork
1 cup calamari strips
1 cup dried cuttlefish strips
Roasted peanuts, to garnish
Fried wonton pastry, to garnish
Spring onion, to garnish
Ginger, to garnish

Preparation

To make the congee base, mix the rice, oil and a pinch of salt. Mix and marinate overnight.

Bring 6 litres of water to the boil. Add the rice and cook for 1 hour or until a thick liquid is formed.

Add the pork crackling, pork stomach, shredded pork, calamari and cuttlefish to the congee base. Continue to boil. Season to taste.

Divide among bowls. Garnish with the peanuts, wonton pastry, spring onion and ginger.
