Pedro Otiniano is the chef and owner of La Cocina Peruana – one of the few Peruvian restaurants in Sydney. In the restaurant, they also sell original Peruvian ingredients should you want to prepare this dish at home.
Ingredients
1/2 cup oil1 onion, diced
3 tsp garlic paste
Pinch of cumin
1 tsp of Peruvian yellow chillies (blended)
1 cup of peas
2 capsicums (1 diced and the other cut in slices for decoration)
1/2 cup pumpkin, cut in small cubes
3 cups rice
5 cups water
1/2 cup black beer
8 chicken breasts (boneless)
Pinch of turmeric
Preparation
Heat the oil in a large frypan over medium heat. Add the onion and fry until aromatic.Add the garlic paste, cumin, chillies, peas, diced capsicum and pumpkin. Season with pepper. Cook until the onions are soft.
Grab a pot and add half of the spice & vegetables mixture into the pot, leaving half in the saucepan.
To the pot, add the rice and water and half of the beer. Cook the rice on a slow simmer for around 20 minutes or until cooked.
In the saucepan, add the chicken, turmeric and the remaining beer. Cook the chicken on a medium heat for around 15 minutes or until cooked.
Serve together. Decorate with the capsicum slices.
