This recipe is very simple but enhances the essential taste of the pasta.

Ingredients

300g spaghetti
3 litres water
6g salt (for boiling the pasta)
100ml extra virgin olive oil
200g cherry tomatoes
1 garlic clove
1 cup capers
1 cup black olives
Parmesan, to serve

Preparation

Cook the pasta in a saucepan of salted boiling water until al dente. Drain.

Heat the oil in a frypan over medium heat. Add the cherry tomatoes and garlic, and gently fry for 5 minutes or until the garlic is golden brown. Add the capers and black olives and cook for a further 3 minutes.

Transfer the pasta to the frypan and mix well.

Top with parmesan to serve.
