This recipe is very simple but enhances the essential taste of the pasta.
Ingredients
300g spaghetti3 litres water
6g salt (for boiling the pasta)
100ml extra virgin olive oil
200g cherry tomatoes
1 garlic clove
1 cup capers
1 cup black olives
Parmesan, to serve
Preparation
Cook the pasta in a saucepan of salted boiling water until al dente. Drain.Heat the oil in a frypan over medium heat. Add the cherry tomatoes and garlic, and gently fry for 5 minutes or until the garlic is golden brown. Add the capers and black olives and cook for a further 3 minutes.
Transfer the pasta to the frypan and mix well.
Top with parmesan to serve.
