Steamed pork ribs is a traditional dish of the Sichuan province in China. This recipe uses a fragrant seasoned crushed rice mix, which coats the ribs prior to being steamed.

Ingredients

25g chilli paste
3g Sichuan pepper
25ml soy sauce
15ml juice of preserved tofu
100g crushed rice (long grain rice crushed in a blender)
5g ginger, finely chopped
5g shallots, finely chopped
15ml cooking wine
20ml vegetable oil
50ml broth
Salt and pepper, to taste
500g pork spare ribs, cut into 3cm pieces
250g sweet potato, peeled, cut into wedges
Fresh chopped coriander, to serve

Preparation

In a frypan, sauté the chilli paste. Combine in a bowl with the Sichuan pepper, soy sauce, juice of preserved tofu, crushed rice, ginger, shallots, cooking wine, oil and broth. Add in salt and pepper to taste.

Coat the ribs with two-thirds of the rice mixture. Coat the sweet potatoes with the remaining rice mixture.

Put the sweet potato into small bamboo steamer, and the cover with the ribs.

Steam with high heat for about 45 minutes until cooked.

Top with chopped coriander to serve.
