Meatballs in chipotle sauce recipe (albondigas)

Ingredients

350g minced beef
250g minced pork
2 eggs
¼ cup breadcrumbs
2 chicken stock cubes
Salt and pepper

Sauce
¼ cup oil
½ white onion, finely chopped
1 garlic clove, finely chopped
2 cups tomato purée
½ cup chipotle sauce*
½ cup chicken stock

Preparation

For the meatballs, mix all ingredients well with hands, and form small balls. Place aside while you make the sauce.

For the sauce, heat oil and fry the onion and garlic together for 2 minutes. Add the tomato purée, chipotle sauce and stock. Bring to the boil. Add the meatballs and simmer for about 30 minutes.

Serve with white rice.

*To make the chipotle sauce, place 1 small tin of chipotle chillies, 1 cup water, 1 garlic clove, 1/4 onion and salt in the jug of a blender. Process until relatively smooth.
