Tomato rice recipe (arroz rojo)

Ingredients

1 garlic clove
1 large fresh jalapeño
¼ cup olive oil
1 cup rice
1 cup tomato purée
1½ cups chicken stock
½ cup frozen peas

Preparation

Fry garlic and whole chilli in oil. When brown add uncooked rice and cook for 2 minutes stirring continuously. Add tomato purée, stock and peas. Cover and simmer for 15 minutes or until cooked.

The family enjoyed this very nicely. Easy to prepare and a great side dish with Kangaroo sausages , on a coolish autumn evening.
