Anneke Mackay-Smith shares her recipe for this old fashioned desert that never went out of fashion in her kitchen!

Ingredients

4 apples, peeled, cored
3-5 tsp berry jam
1 litre milk
1 vanilla pod or a few drops of vanilla essence
60g butter
60g flour
60g sugar
2-3 eggs

Preparation

Preheat oven to 180°C.

Either cut the apples in half or keep them whole. Arrange the apples next to each other in a ovenproof dish and fill the cored holes with jam.

In a separate saucepan, bring the milk and vanilla pod or essence to boil. Once the milk boils, remove the vanilla pod.

In a separate saucepan, warm the butter, add the flour and mix, to form a thick paste. Add the vanilla milk, a little at the time, while stirring. Remove from heat. Add sugar and the eggs one at a time.

Pour the custard over the apples. Bake in the oven for about an hour.

Once the top is golden, they are ready to serve.

Hot Tips

Using a Tajine

Layer celery stalks on base of tajine before filling with meats etc. This acts as a trivet, lifting the meat off the base of the dish and prevents burning.

Glossary

Garlic

Used liberally in many dishes, garlic adds flavour to everything from soups to homemade sausages. One passionate Croatian cook says it's hard to imagine a single household in all Croatia without garlic.
