Nicoise salad recipe

Ingredients

3-4 eggs, at fridge temperature
8 tomatoes, cored, cut into 2cm slices
Sea salt
1 clove garlic, crushed
2 green capsicum, cut into thin matchsticks
4 spring onions, white part only, trimmed, sliced diagonally
2 small Lebanese cucumbers, peeled (optional), finely sliced
120g small black olives, rinsed, dried with paper towel
Torn lettuce, such as cos (optional)
250-300g tuna in oil, drained well, flaked
10 anchovy fillets, drained well, cut lengthwise into 2-3cm pieces
12 basil leaves

Vinaigrette
120ml extra virgin olive oil
Sea salt and freshly ground black pepper
1 clove garlic, peeled, bruised with the flat of a knife
2 tsp tarragon vinegar or Banyuls, to taste

Preparation

Prick the eggs with a pin, then cook in a saucepan of boiling water for 10 minutes. Refresh under cold running water until cold. Shell and cut into quarters.

Place the tomato in a colander, then sprinkle with sea salt. Leave for 15-20 minutes, then gently pat dry with paper towel.

Rub a platter with the garlic and season it lightly. Arrange the tomato, capsicum, spring onion, cucumber, olives, lettuce, egg, tuna and anchovies on the platter. Gently tear the basil leaves and scatter over the salad.

To make the vinaigrette, mix the ingredients, adding enough salt, pepper and vinegar to your taste, and distribute evenly over the salad. Toss gently so that the ingredients are anointed evenly.

omg! this is like amazing and like i just love it and like want to eat it everyday..bahaha jks but i do think its good cuz like u kno its great and healthy and cuz i weigh 40 and im only 30 so like i yeaa want to lose weight like u kno every fat person wants to lose weight and i want to be a model so thats y i love this muahh to u xx
