Sashimi is called hwae in Korean. Koreans eat hwae with go-chu-jang (Korean chilli paste) instead of wasabi. The dish can be described as sashimi bibimbap.

This recipe consists of fresh salad ingredients and sashimi on top of rice, eaten with Korean chilli paste. Similar in concept to Japanese chirashi sushi, this rice dish evolved because of Korean love for sashimi and bibimbap.

Ingredients

4 cups short grain rice, cooked
1 cup lettuce, shredded
1 lebanese cucumber, julienned
½ cup Korean perilla leaves (kkae-nip), finely shredded (available from an Asian grocer or can be substituted with coriander)
4 tbsp alfalfa sprouts
300g sashimi, (eg. salmon, king fish), roughly diced into 1-2 cm cubes
4 tbsp fish roe
4 tbsp sesame oil

Korean chilli paste
4 tbsp kochujang (Korean chilli paste available from an Asian grocer)
4 tbsp vinegar
2 tbsp raw sugar

Preparation

Place 1 cup of rice into each bowl.

Top carefully with the lettuce, cucumber, perilla, alfalfa, sashimi and fish roe.

Drizzle with 1 tablespoon sesame oil.

Top with chilli paste sauce. Mix contents of your bowl slightly before eating it with a spoon.

Anyoung ha se yo! I've always enjoyed hwe dop bap at Korean restaurants but never tried making it at home myself. But this recipe looked quite easy so I tried and surprised myself. It looked good and it was yum! The chilli paste was perfect. I'm thinking about making it for my friends' gathering coming up soon. I think it would make a good display as well. :)

Simple and healthy !!!
I must say I am not a born cook but this recipe is so simple I could prepare it without much trouble. I always thought sashimi was Japanese but this is definitely unique and delicious and KOREAN!!. I always thought sashimi by itself was somewhat boring but the rice, vegies and kochujang (not sure if this is the right way to spell the word) absolutely completes the dish. Not only this tastes great but so fresh and healthy~ !! LOVE IT LOVE IT !!!!
