The title “married” refers to the way the dish is married together in the preparation process. This traditional Costa Rican recipe is described by enthusiastic home cook, and Head of Cultural Affairs of the Consulate of Costa Rica in Sydney, Marvin Tapia.

Ingredients

2 onions
Oil, for frying
1 cup rice
1 cup black beans
2 cloves garlic
1 stick celery
200g steak (thin cut preferred)
1 plantain
1 whole beetroot
Mayonnaise, to taste
2 corn tortillas
150g Turrialba cheese (soft cheese)

Preparation

Dice 1 of the onions. In a frypan, sauté the onion with a little oil.

Rinse the rice well. Add the rice to the frypan and add water to cook the rice. When cooked, drain the liquid.

In a separate pot, boil the black beans with water, together with the other whole (peeled) onion, garlic and celery. Boil until the beans are soft, and drain when done. Remove the onion, garlic and celery.

Fry the steak whole.

Slice the plantain in half, and fry until golden brown. Set aside.

Cut the beetroot into small squares and mix with the mayonnaise.

In a dry frypan, fry the tortilla with pieces of the soft cheese on top, until melted.

You can also serve this with a green salad of your choice and a fried egg.

Hot Tips

Fresh vs dry pasta

Similarly to pasta shapes, the choice between fresh and dry pasta is more about matching flavours and textures than about which is superior. Fresh pasta is well suited to delicate sauces, but its primary purpose is to make tortellini, ravioli and lasagne sheets.

Glossary

Burghul

Usually made from durum wheat, it is similar to couscous and used in salads and pilavs and in Lebanese cooking to make tabouleh and kibbeh.
