The widow’s soup is a traditional vegetable soup with ricotta, or cheeselets and egg. It goes back hundreds of years, when food was scarce and any woman who was widowed and left with children to feed, was given vegetables by market gardeners to make a hearty meal for the family.

Ingredients

400g potatoes, peeled, chopped
100g onions, chopped
1 stalk celery
400g spinach, washed, chopped
200g cabbage, chopped
500g cauliflower florets
250g fresh or frozen peas
200g small zucchini
1½ltrs water
12 fresh cheeselets or ½kg ricotta
1 egg (per person)

Preparation

In a pot, put all the vegetables and water, and bring gently to the boil without covering.

After 2 minutes, cover the pot and simmer for 30-35 minutes.

Add the cheeselets or ricotta, and cook for a further 10 minutes.

Break the eggs and add them to the pot. Cook for a further 5 minutes.

To serve, ladle the soup into deep soup bowls with 3 cheeselets or a piece of ricotta, and an egg for each person. Serve with toasted or crunchy bread.
