Lentil soup with roti recipe (daal dhokli)

When we talk about Indian food, we usually refer to the North Indian naan breads and curries, or South Indian cuisine, like dosa and idli. Here we would like to present some recipes that come from the western part of India, from the state of Gujarat.

Daal dhokli is a one dish meal savoured as a winter warmer. It is a lentil soup cooked with seasoned pieces of roti.

Ingredients

200g wheat flour
Salt, to taste
1 tbsp turmeric powder
¼ tbsp ajwain (bishop’s weed)
2 tbsp red chilli powder
2 tbsp oil
250g toor dal
2 tbsp ghee
3-4 cloves garlic
2 small pieces of cinnamon
1 tbsp mustard seeds
6-8 curry leaves
3 green chillies
Pinch of asafoetida
1 tbsp tamarind
2 tbsp brown sugar
50g groundnut
1 tbsp garam masala
3 tbsp green chilli paste
2 tomatoes
½ cup cilantro leaves, to garnish

Preparation

Sift the wheat flour. Add salt, half of the turmeric powder, ajwain, and half of the red chilli powder. Mix well. Add half of the oil, and water, and mix into the flour. Knead into a dough roti-like consistency. Set aside.

Wash the toor dal and pressure cook it for three whistles. Allow to cool.

Heat the remaining oil and ghee in a pot. Add the garlic, cinnamon and mustard seeds. When they start to crackle, add the curry leaves, green chillies and a pinch of asafoetida. Pour this mixture over the toor dal.

In a bowl, add the tamarind, brown sugar, groundnut, garam masala, green chilli paste and the remaining red chilli powder, and mix well. Add the tomato pulp, remaining turmeric powder, salt and 2 cups of water. Add this to the toor dal and bring to a boil.

In the meanwhile, roll out the dough to make a large roti. Cut the dough into diamond shapes, and add to the boiling toor dal. Boil for 10 minutes, and remove from the flame.
To serve, garnish with the cilantro leaves.
